The
origin of the famous cheese of Guía, lies in the first towns settled in the
midlands of Guía, consisting mainly of Portuguese and Extremadura. It is in these regions, where it is now other types of cheese
flower, some of which was exported to our geography in the early sixteenth
century to the beginning of settlement in the highlands of Guía.


Of the Portuguese presence in the area are still traces in the
toponymy of the area, eg the Palmital, Paso de Los Santos and Maria Bascamao (derived from
Basque Amado). In the presence of Extremadura, we have for example the following:
"... only the poor gentlemen adventurers stremeños, Biscayne,
Castilian ... I covered his mouth with a bare cliffs near the summit Telde,
Aguimes, Tirajana i Guía. .. "
